How We Design Bars and Restaurants

Every bar and restaurant design project begins with listening. Before drawing a single line, we understand three fundamental elements.

The first is the kitchen concept. What type of cuisine will the restaurant serve? How many covers will it manage? What rhythm of service does it require? A seafood restaurant needs different flows from a Neapolitan pizzeria. Operational needs drive many of the design choices we will make.

The second is brand identity. A restaurant is not just food, it is atmosphere, values, narrative. For Ammare in Paris we translated the Sicilian maritime soul into interiors that evoke yacht cabins, with brass, reclaimed stone and coral tones. The concept always emerges from the essence of the project, never from a pre-packaged template.

The third is the target customer. A neighbourhood bistro requires a different approach from a fine dining destination. Materials, lighting, even acoustics change radically depending on who will inhabit the space and at what times of day.

Once we understand these elements, we develop the full concept. We do not simply furnish a venue, we create the total experience: from the façade that attracts from the street, to the entrance that welcomes, to the dining room that invites guests to linger, to the bathrooms that maintain the aesthetic promise established at the door.

Complete Design: From Naming to Menu Graphics

Many studios limit themselves to interior design. VANDA offers complete restaurant design that embraces every brand touchpoint.

Naming and brand identity come first. The name “Ammare” for the Parisian seafood restaurant carries multiple layers of meaning: it contains “amare” (to love), it holds “mare” (sea), it weaves together the initials of the owners Aurelio and Mariaclaudia, and it echoes the Sicilian expression for “at sea”. The right name becomes the foundation for everything that follows.

Interior architecture translates the concept into physical space. We design every element bespoke. For Ammare we created the curved brass counter that mimics the movement of waves, the brass-edged tables that reference nautical accessories, the buttoned banquettes that evoke yacht seating. Nothing comes from a catalogue. Everything was created specifically for that project.

The material and colour palette communicates identity immediately. Every material carries a message. Reclaimed stone brings authenticity, wood brings warmth, brass brings refinement. Colours are not mere decoration but a precise narrative tool.

Lighting design defines atmosphere more than any other single element. Light changes the perception of space throughout different times of day, creates the intimacy needed in the evening, and enhances the food on the tables. We design lighting as a dynamic system that accompanies the restaurant through its different moments.

Menu design extends the visual identity from the physical to the graphic. Typography, layout, illustrations — everything must be coherent with the spatial concept we have created.

Restaurant Design That Optimises Service

A beautiful restaurant that does not work operationally is a design failure. Our bar and restaurant design always balances aesthetics with efficiency.

The kitchen-to-dining room layout must be optimised from the outset. The journey from the cooking surface to the table must be as fluid as possible. We minimise distances, eliminate bottlenecks and create service stations in strategic positions. When staff work better, service becomes faster and customers are more satisfied.

Customer flows deserve the same attention. From entrance to tables, from bathrooms to exit, we design routes that feel intuitive and avoid congestion even at peak times.

Acoustics require careful control. A restaurant that is too noisy exhausts customers quickly. We use sound-absorbing materials in strategic positions and design ceilings to distribute sound evenly, maintaining the vital energy of the space.

Bar and Restaurant Projects in Italy, Spain and Europe

VANDA has designed several bars and restaurants across Italian and European cities, with approaches ranging from entirely new concepts to strategic refits of existing spaces.

Ammare in Paris, completed in 2022, is a seafood osteria in the Étienne Marcel neighbourhood. The project encompassed the full design: naming, brand identity, interior design, custom furniture. The maritime concept is expressed through the brass shell, coral banquettes and reclaimed stone.

Oh My Crunch in Forte dei Marmi is a fast-casual concept where the identity is built on energy, colour and precision with a completely different register from Ammare but with the same attention to the total experience.

Anetho in Castel San Giovanni translates a contemporary approach to food into an intimate and welcoming space where every detail reinforces the gastronomic identity of the venue.

In Spain, we have worked on projects in Burgos and Madrid, bringing the same Italian design rigour to spaces that speak to a different cultural sensibility while maintaining the coherence that distinguishes every VANDA project.

Bar Design: Spaces That Invite People to Stay

Bar design requires particular attention to the rhythm of service and the versatility of the space throughout the day.

Many bars serve different customers at different moments. Breakfast requires one atmosphere, a quick lunch another, the evening aperitivo yet another. We design adjustable lighting, versatile seating and zones that can change function during the day without requiring physical modifications to the space.

The bar counter becomes the central scenic element, the theatre of service, the point where the magic happens. We design counters as functional sculptures: premium materials, integrated lighting, a layout that optimises the barista’s workflow while maintaining visual contact with the customer.

Construction adds a further two to six months depending on complexity and size. A refit of an existing venue can be faster, with total timescales of four to eight weeks.

Do you design the professional kitchen as well? We collaborate with specialists in professional kitchen design to ensure the optimal layout, the right equipment choices and compliance with all current regulations. We coordinate the seamless integration between kitchen and dining room to create the most efficient service flows possible.

Do you work only on new concepts or also on refits? We work on both. Many of our projects are strategic refits that renovate existing restaurants with a contained investment but significant visual impact. Others start from a completely empty space and develop an entirely new concept.
